Favorite Banana Bread Recipe

This recipe comes from an old cookbook called
"Six Ingredients or Less"
that I've had for years.  You can see from my photo below it is pretty simple but I alter it a bit.

Banana Bread Recipe (family favorite)
1 cup butter, softened (I use real butter, not margarine)
2 cups sugar (the real stuff)
2 cups mashed very ripe bananas
4 eggs, well beaten
2 teaspoons baking soda
2 1/4 cups flour
1 tablespoon of cinnamon (my addition)
1 tablespoon of vanilla (my preferred addition)
or
1 teaspoon of Almond extract (used on occasion)

Directions:  In a large bowl cream sugar and butter.  Add beaten eggs, mashed bananas and vanilla.  Combine baking soda and flour, then add cinnamon.  Then add to banana mixture, stirring enough to moisten flour mixture. Pour into 2 greased loaf pans and bake for 50 minutes at 350 degrees, or until knife comes out clean in middle.

Run butter knife around edges and turn out immediately to cool.  Or just slice while warm and pour yourself a big glass of milk.

Sit in your happy place and enjoy!

Recipe makes two loaves which usually get eaten the same day I make them.  Hope you try it!

Absent due to surgery...

Hello fellow readers/bloggers- I have been absent due to surgery on June 12, 2012. I have the best friends and family who have stayed with me (thanks honey), visited, called/texted/emailed to check in frequently, offered help where needed and of course loving support of my decision to finally have surgery.

So here's a few photos of the lovely flowers, plant and wine I received to wish me a speedy recovery and a Happy Birthday (on 6-19).

Love you all- Erin 🌸

Funny Friday - A Glass of Wine

This was sent to me by email from one of my favorite people, just had to share.

To my FRIENDS who enjoy a glass of wine...
And those who don't and are always seen with a bottle of water in their hand.

As Ben Franklin said:
In wine there is wisdom,
In beer there is freedom,
In water there is bacteria.

In a number of carefully controlled trials,
Scientists have demonstrated that if we drink
1 litre of water each day,
At the end of the year we would have absorbed
More than 1 kilo of Escherichia coli, (E. Coli) - bacteria
Found in feces.
In other words, we are consuming 1 kilo of poop.

However,
We do NOT run that risk when drinking wine & beer
(or tequila, rum, whiskey or other liquor)
Because alcohol has to go through a purification process
Of boiling , filtering and/or fermenting .

Remember:
Water = Poop
Wine = Health
Therefore, it's better to drink wine and talk stupid,
Than to drink water and be full of $hit...

There is no need to thank me for this valuable information:
I'm doing it as a public service

Here is Iowa it is expected to be 90+ degrees (way too hot for me)
so I will be enjoying my central air conditioning
and hope to get some painting time in.

Enjoy your Friday and weekend my friends.

Words of Wisdom Wednesday - 45 Lessons Life Taught Me

Written by Regina Brett, 90 years old, of the Plain Dealer, Cleveland, Ohio:

"To celebrate growing older, I once wrote the 45 lessons life taught me. It is the most requested column I've ever written."

1. Life isn't fair, but it's still good.

2. When in doubt, just take the next small step.

3. Life is too short – enjoy it.

4. Your job won't take care of you when you are sick. Your friends and family will.

5. Pay off your credit cards every month.

6. You don't have to win every argument. Stay true to yourself.

7. Cry with someone. It's more healing than crying alone.

8. It's OK to get angry with God. He can take it.

9. Save for retirement starting with your first paycheck.

10. When it comes to chocolate, resistance is futile.

11. Make peace with your past so it won't screw up the present.

12. It's OK to let your children see you cry.

13. Don't compare your life to others. You have no idea what their journey is all about.

14. If a relationship has to be a secret, you shouldn't be in it.

15. Everything can change in the blink of an eye. But don't worry; God never blinks.

16. Take a deep breath. It calms the mind.

17. Get rid of anything that isn't useful. Clutter weighs you down in many ways.

18. Whatever doesn't kill you really does make you stronger.

19. It's never too late to be happy. But it’s all up to you and no one else.

20. When it comes to going after what you love in life, don't take no for an answer.

21. Burn the candles, use the nice sheets, wear the fancy lingerie. Don't save it for a special occasion. Today is special.

22. Over prepare, then go with the flow.

23. Be eccentric now. Don't wait for old age to wear purple.

24. The most important sex organ is the brain.

25. No one is in charge of your happiness but you.

26. Frame every so-called disaster with these words 'In five years, will this matter?'

27. Always choose life.

28. Forgive but don’t forget.

29. What other people think of you is none of your business.

30. Time heals almost everything. Give time time.

31. However good or bad a situation is, it will change.

32. Don't take yourself so seriously. No one else does.

33. Believe in miracles.

34. God loves you because of who God is, not because of anything you did or didn't do.

35. Don't audit life. Show up and make the most of it now.

36. Growing old beats the alternative -- dying young.

37. Your children get only one childhood.

38. All that truly matters in the end is that you loved.

39. Get outside every day. Miracles are waiting everywhere.

40. If we all threw our problems in a pile and saw everyone else's, we'd grab ours back.

41. Envy is a waste of time. Accept what you already have not what you need.

42. The best is yet to come...

43. No matter how you feel, get up, dress up and show up.

44. Yield.

45. Life isn't tied with a bow, but it's still a gift.

Hope this puts a smile on your face.  Hugs,  Erin

Funny Friday - Oh to be 8 again!

Oh To Be 8 again!

A man was sitting on the edge of the bed, watching his wife,
who was looking at herself in the mirror. Since her birthday was not far off
he asked what she'd like to have for her birthday.

'I'd like to be eight again', she replied,
still looking in the mirror ..

On the morning of her Birthday, he arose early,
made her a nice big bowl of Coco Pops,
and then took her to Adventure World theme park.
What a day!
He put her on every ride in the park;
the Death Slide,
the Wall of Fear,
the Screaming Roller Coaster,
everything there was.

Five hours later they staggered out of the theme park.
Her head was reeling and her stomach felt upside down.
He then took her to a McDonald's where he ordered her a Happy Meal
with extra fries and a chocolate shake.

Then it was off to a movie, popcorn, a soda pop, and her favorite candy, M&M's.

What a fabulous adventure!
Finally she wobbled home with her husband and collapsed into bed exhausted.

He leaned over his wife with a big smile and lovingly asked,
'Well Dear, what was it like being eight again?

Her eyes slowly opened and her expression suddenly changed .

'I meant my dress size, you Retard!!!!'
The moral of the story: Even when a man is listening, he is gonna get it wrong.
But we love them anyway! :-)

Enjoy your Friday and your weekend.  Now go hug your man, you love him despite his moments.  And he loves you despite your moments of woman crazy....
Hugs, Erin
